Coffee’s hidden signature: New research from Finland

As global coffee consumption continues rising and metabolic diseases remain a leading health challenge, understanding how this everyday beverage interacts with the human body has never been more urgent. A new study from the University of Oulu, published July 16, 2026, in the European Journal of Nutrition, examined 2,264 participants from the Northern Finland Birth Cohort 1966, all aged 46.

The findings reveal that habitual coffee drinkers carry less body fat, possess more skeletal muscle and display distinct hormonal patterns—some differing significantly between men and women—even when body mass index remains similar across consumption levels.

What the data shows about body composition

Researchers analyzed blood metabolites, cardiometabolic risk markers and sex hormones among participants whose coffee habits ranged from minimal to heavy consumption. The results showed a striking pattern: higher coffee intake tracked with lower total body fat and visceral fat, the metabolically dangerous fat surrounding internal organs. Skeletal muscle mass also trended higher among those drinking more coffee.

These differences emerged despite participants sharing comparable BMIs, suggesting coffee’s association with body composition operates independently of overall weight. Additionally, both men and women with higher coffee consumption displayed lower circulating levels of branched-chain amino acids into blood. Chronically elevated levels of these compounds have previously been linked to insulin resistance and increased Type 2 diabetes risk.

Hormonal patterns reveal sex-specific differences

Lead author Luca Verroest, a doctoral researcher at the University of Oulu, noted that the most compelling discoveries involved hormones. Among men, higher coffee consumption correlated with a more favorable glucose-insulin profile, higher total and bioavailable testosterone, and increased sex hormone-binding globulin. Free testosterone and the free androgen index were modestly lower.

Women showed less extensive hormonal associations, primarily characterized by higher SHBG and lower free androgen measures. These patterns persisted even after researchers adjusted for BMI and lifestyle factors.

“Coffee is consumed by millions every day, yet we still know surprisingly little about how it relates to metabolism and hormones,” Verroest said. The hormonal signature remained visible throughout the analysis.

Historical context and future research directions

Finland’s coffee culture provides ideal conditions for such investigation. With annual consumption averaging 11.8 kilograms per person, the country ranks among the world’s highest consumers. Earlier research has connected regular coffee intake with reduced risks of type 2 diabetes and cardiovascular disease, but the biological mechanisms have remained unclear. This study suggests hormonal pathways may play a role.

Because the research is observational, it cannot establish that coffee directly caused these biological differences. Researchers are now investigating whether coffee’s compounds—potentially including polyphenols like caffeic acid and chlorogenic acid—drive these changes. Animal model studies are underway, with human intervention trials planned as the next step.

What this means for coffee drinkers

The study offers reassurance rather than prescription. Harvard’s Dr. JoAnn Manson noted that prior research has linked regular coffee intake, even four to five cups daily, with lower Type 2 diabetes risk and improved cardiovascular biomarkers. However, researchers emphasize that further evidence is needed before dietary recommendations can be made.

For the millions who start each day with coffee, this research adds another layer of understanding to a beverage already associated with numerous health benefits. The findings invite deeper exploration into how this daily ritual influences not just alertness, but the fundamental biology that shapes metabolic health.
